中国越橘富含花青素，越橘花青素重的色素物质，主要为花青素-2-葡萄糖苷、花青素-3-木糖苷、花青素-3-半乳糖苷、花青素-2-鼠李糖苷、翠雀花-3-鼠李糖苷、翠雀花-5-葡萄糖苷、3-O-酰原花翠素、锦葵色素-3，5-二糖甙和3，3-二-酰原花萃素等。越橘花青素是高级医药中间体，有助于维持毛细血管完整性和稳定胶原质。花青素也是有力的抗氧化剂。
欧洲越橘又称蓝莓，出产于欧洲、北美洲。成熟的越橘果实富含黄酮类色素和用作抗氧化剂花青素。健康人或视力障碍病人单用越橘提取物或同时服用β-胡萝卜素和维生素E，可明显改善夜间视觉，对黑暗反应较快，眼暴露于亮光之后，能较快回复视敏度。飞行员、司机、电脑操作人员服用越橘提取物，能有效提高视网膜调节能力，减轻光污染和光线刺激对视力造成的损伤。
